Cashew Chicken Stir-Fry "easy delicious weeknight dinner"

At first you might be startled by the matching of chicken, grapes and cashews but they work excellently together in this dish. They also work together beautifully in a salad not unlike my Coronation Chicken recipe. It is best not to cook the grapes too much otherwise they will lose all their juices.

Serves 4

INGREDIENTS

80g (3oz) unsalted butter
1 large onion, finely chopped
4 boneless skinless chicken thighs, sliced into bite-size pieces
1 tablespoon Taste #5 Umami Vegetarian Paste
200g (7oz) large green seedless grapes, halved
splash of dry white wine
200g (7oz) unsalted cashew nuts
sea salt and freshly ground black pepper


Method

  1. Melt the butter in a pan on a medium heat and fry sauté the onion until soft and golden.
  2. Add the chicken and fry until cooked through.
  3. Add the umami paste and grapes and stir together.  Splash in the wine and turn the heat up until all the alcohol has evaporated, stirring gently.
  4. Add the cashew nuts and season to taste.
