Rubbing it in! Your ultimate guide to the most delicious & aromatic rubs

Laura's Stardust herb & spice blend recipes
Unsurprisingly, meat responds to massage with aromatic flavoring ingredients. Even the toughest cuts can be made into noble dishes when rubbed with one my Stardust Rubs. These stardusts are pure magic and make ideal seasonings for all sorts of food. Rub them into meat, poultry and fish that has been brushed with olive oil before grilling or roasting. They also add explosive deliciousness as a sprinkle on seasoning just before serving. Use a coffee grinder for fine powders or a mortar and pestle for a coarse, less refined texture. It is important to remember that these rubs are meant to be used where high heat has cooked and transformed the very strong flavors and should not be eaten raw.

Tasty Transformations

Dry Rubs

Coarsely mill the following mixtures to create flavorful rubs ideal for roasting or grilling meats and robust fish and shellfish.

 

Wet Rubs

Much coarser than dry rubs, these are for grilling and roasting where you want to give the meat, poultry or fish a crust that can be brushed off to serve. 

Using a mortar and pestle, coarsely grind the ingredients with olive oil, garlic and a handful of fresh herbs depending on the flavor profile you want to create.

VARIATION For extra flavor and the juice and zest of an orange, lemon or lime can be added to your mixture. A splash of spirits such as tequila, vodka, grappa, gin or brandy can will also impart flavor and enhance the herbs and spices.

 

Stardusts

The words "instant" and "delicious" rarely go together, however these most refined transformations create both decorative and deeply delicious tasty sprinkles. With a little time and effort to prepare, these beauty of these flavor dusts is the immediate reward.
