Umami Truffled Steak Hankerchiefs

This recipe was shown to me by my friend and mentor Nobu Matsuhisa, the ultimate flavour master. He serves a similar dish in his restaurants, with the addition of a sprinkling of his dried miso powder.

Serves 1

INGREDIENTS

1 tablespoon olive oil
1 beef fillet steak, sliced very thinly widthwise
freshly ground black pepper
100g baby spinach leaves
2 tablespoons coarsely grated Parmesan cheese

For the Dressing

1 tablespoon truffle oil
squeeze of Taste #5 Umami Bomb
squeeze of lemon juice

TO SERVE

Furikake or toasted sesame seeds


Method

  1. In a wok, heat a little olive oil. When just smoking, add the beef slices and flash-fry for 1 minute.
  2. Make the dressing by mixing all the ingredients in a bowl and set it aside.
  3. Toss the raw spinach leaves and the steak ‘handkerchiefs’ in the dressing mixed with the meat juices and the Parmesan cheese.
  4. Serve garnished with a little furikake or toasted sesame seeds.
