Ultimate Cheese on Toast

Rarebit or Rabbit, which adds other savoury ingredients to the cheese before melting on slices of toast. My Umami Bomb is a perfect addition, adding extra deliciousness. This can be served with a fried egg on toast – what is known as a Buck Rabbit!

Makes 4 slices

INGREDIENTS

1 tablespoon fresh sage, chopped
1 tablespoon grated onion
225g (8oz) Cheddar cheese, grated
1 teaspoon mustard
1 egg, beaten
1 teaspoon Taste #5 Umami Bomb
4 large, thick slices of white bread
pinch of cayenne pepper (optional)


Method

  1. Preheat your grill (broiler).
  2. Mix all the ingredients together, except the bread and cayenne pepper. Toast the bread on both sides until crisp and golden.
  3. Divide the cheese mixture into four, spreading it over each slice of toast. Make sure you take the mixture to the edges so that the edges of toast don’t get burnt. Sprinkle over some cayenne pepper, then put them under the hot grill (broiler) for around 4-5 minutes, or until the cheese is golden and bubbling.
