The cheapest and humblest of ingredients are transformed into this fantastic dip. Not only good for dipping, it also great spread on crostini topped with a drizzle of good olive oil and a sprinkling of fresh herbs.
15oz can cannellini beans
2 cloves garlic
2 tablespoons freshly squeezed lemon juice
¾ extra virgin olive oil
2 tablespoons Bomba! XXX
Kosher salt and freshly ground black pepper
1 tablespoon flat leaf parsley, finely chopped
- Place all the ingredients into a food processor and blend until smooth.
- Season to taste and sprinkle with freshly chopped parsley to serve.
