Give chicken breasts a deliciously flavorful boost with pancetta and Taste #5 Original Umami paste. This recipe not only adds flavor but wraps the chicken in a ‘jacket’ keeping it nice and moist. I love to serve this with lentils simply cooked with onion and herbs. This recipe also would be very lovely with creamy mashed potatoes.
6 slices of pancetta
2 chicken breasts, skinless
2 teaspoons Taste #5 Original Umami Bomb
2 sprigs of rosemary
Extra virgin olive oil
sea salt and freshly ground black pepper
- Preheat the oven to 200°C (400°F).
- Lay out 3 slices of pancetta vertically on your work surface, slightly overlapping each piece.
- Spread each chicken breast with 1 generous tsp of Umami Bomb. Place a sprig of rosemary on top and wrap each piece of chicken in the pancetta slices. Do the same with the other breast and transfer into a roasting tray.
- Splash with olive oil and season with salt and black pepper. Put in the oven for30 minutes until the chicken is cooked through.
