Vongole Sauce (Clam)

It is important that the clams are fresh and well-cleaned before cooking. Rinse them in several changes of water until the water is clear. Then add a handful of sea salt and leave to 'purge' in cold salted water for a few hours. Drain and rinse before using. Sort through the clams, discarding any shells that are open and do not snap shut when tapped, as they are dead and potentially dangerous.
