Umami Sausage Balls

These are some of the most umami-packed sausage balls ever to be invented. Delight your guests with these delicious little treats - either as an appetiser or with the meal. And as a bonus this recipe is gluten-free, so everyone can enjoy a bite of deliciousness.

Serves 8

INGREDIENTS

2.5oz butter
1 large onion, finely chopped
splash red wine
1 garlic clove, finely chopped
7oz fine beef mince
7oz fine pork mince
7oz fine veal mince
2.5oz prosciutto crudo, very finely chopped
1 tbsp grated Parmesan cheese
2 tbsp Taste #5 Bomba! XXX Tomato Paste
1 tbsp Taste #5 Umami Bomb
1 large egg
handful of gluten free rolled oats
handful of flat-leaf parsley, finely chopped
sprig of marjoram, finely chopped
kosher salt and freshly ground black pepper


Method

  1. Preheat oven to 400°F.
  2. Melt the butter in a frying pan, add the onion and fry until soft and just beginning to color. Splash with the red wine and cook for a couple of seconds over a high heat until the alcohol has evaporated.
  3. Place all the other ingredients in a large mixing bowl, add the fried onion mixture and use your hands to work all the ingredients together rather like a large burger mix.
  4. Season but be careful not to add too much salt as the flavours are already fairly salty.
  5. Roll into individual stuffing balls and cook in the oven for around 30-40 minutes.
